Description: To prepare students for entry-level employment in restaurant positions by familiarizing them with all aspects of Front of the House and Back of the House concepts, equipment and procedures. Students will receive basic instruction in the following areas with the goal of preparing them to successfully perform any entry level job in a restaurant's kitchen and in customer service. Taught in a professional teaching kitchen, the final class hours will involve running a menu through an actual dinner service line.
The Course is designed to help students acquire starting employment at a restaurant or food facility with the skills necessary.

OBJECTIVES

BACK OF THE HOUSE: THE KITCHEN (50 hours)

• Kitchen equipment: operation, purpose, cleaning
• Knife skills: Types and care of knives, cuts, terminology
• Culinary terminology
• Basic Principles of Cooking Techniques: braising, sauté, roast, steam, poach
• Flavors and flavorings: developing a culinary palate
• Following recipes/developing new dishes – understanding menus and recipes – mise en place
• Plating
• Understanding Food Costs - Food rotation
• Food safety and sanitation
• Titles/Roles in the kitchen - Respect in the kitchen
• Professional Dress and Hygiene



FRONT OF THE HOUSE: SERVING THE CUSTOMER (30 hours)

• Professionalism
• Dress and Appearance
• Customer interaction
• Table service: taking orders, submitting orders to the kitchen; timing orders; serving plates;
• Buffet Service: set up, refill

Qualifications:

• Knowledge of all above objectives
• Associates Degree, a higher degree preferred
• TIPs certified preferred
• Serve-Safe Certified preferred
• Must have an understanding of basic culinary terminology
• Intermediate knowledge of:
o Microsoft Word, Excel, Outlook and PowerPoint
• Be able to lift, move, manipulate any and all equipment involved with teaching a class (40lbs or greater)
